MUMBAI-SPECIFIC OPERATING CHALLENGES
Rent, access windows, building permissions, exhaust, deliveries and limited back-of-house space can shape the operating model before the first recipe is tested.
Neighbourhood cafés, high-street restaurants, delivery-led formats and office catchments need different dayparts, menus, service speeds and channel economics.
Strong systems help teams execute consistently across busy shifts, new hires, delivery orders and changing customer expectations.
CAFÉ CONSULTING
A café needs a clear reason to return, a menu that works at the counter and online, and an operating rhythm that protects speed and quality. Restavision can support format positioning, menu architecture, beverage and food costing, equipment planning, service flow, staffing, opening readiness and review routines.

WHERE WE CAN HELP
Clarify customer, occasion, price point, service model, seating, kitchen flow and the role of dine-in, takeaway and delivery.
Translate the property, equipment, vendor, staffing and pre-opening requirements into an executable launch plan.
Use trials, checklists, training and operating reviews to move from fit-out to a controlled opening.
Menu decisions should connect customer appeal with contribution, preparation time, yield, portion control and channel economics. Support can include recipe standardisation, costing, pricing, menu mix, engineering, packaging and food-cost control.
Explore Menu Engineering & Food Costing for a deeper view of the service.
Turn the intended experience into repeatable work: opening and closing routines, receiving and storage, production, service, dispatch, hygiene, cash, inventory, training and manager reviews.
For structured systems, see Restaurant Operations & SOP Consulting.
Before a Mumbai concept expands, its economics and operating standards need to travel. Restavision can help with franchise readiness, playbooks, training, audits, outlet controls, format standards and rollout planning.
Reviews are operating feedback. Build a practical system for monitoring guest sentiment, responding consistently, identifying recurring service gaps and protecting the reputation earned at the outlet.
Use the right stack for the operating problem: POS and reporting, CRM and loyalty, aggregator workflows, dashboards, digital checklists, photo-backed audits and management information. Technology should make decisions and follow-up clearer, not add complexity.
THE OPERATING ARC
Make the concept, property and opening plan executable.
Build routines that teams can follow on a real shift.
Improve menu, margins, service and customer retention.
Prepare the controls and playbooks for more outlets.
CASE STUDIES
The problem: A great dine-in experience and strong sales, but profit was struggling. Ingredients were bought above market price, there were no standard recipes, and food cost had never been measured.
What we did: Renegotiated prices with the existing vendors and brought in new verified vendors offering the same or better quality for less. Wrote a standard recipe card for every item on the menu.
The result: Food cost is now measured every month and has been brought under 30%.
The problem: The bakery ran four shops, two in Mumbai and two in Pune, from one production unit, with four more shops on the way. The owners were not sure what equipment to buy, which vendors to trust or how to plan the production flow.
What we did: Studied how the unit worked, redesigned the kitchen to supply the new shops, chose the equipment with their team, negotiated vendor prices and managed procurement, then coordinated the civil and fit-out teams on site so the work finished faster.
The result: Daily output went from about 8,000 units to 20,000, two and a half times as much, with a smoother production flow to supply the new shops.
